Cashew Dip

This dip lends a creamy consistency and wonderful mild flavor that mixes well with most spices.

Ingredients
 1 cup Raw Cashews, soaked
 ½ Lemon, juiced
 ½ cup Water
 ½ tsp Sea Salt
 1 tsp Dijon Mustard (optional)

Soak cashews in water for 8 hours or overnight.

Drain and put in blender or food processor.

Add water, lemon juice, mustard and salt.

Blend until cashews are very creamy.

Spice it up by adding chipotle peppers, curry powder, or more lemon juice.
