Fresh Corn Salad

This delicious addition to your summer BBQ will instantly upgrade your spread.

 3 ears Organic Corn, cooked and sliced from cob
 2 tbsp Lime Juice, fresh
 2 cloves Garlic, finely chopped
 ½ tsp Sea Salt (plus additional to taste)
 ½ tsp Black Pepper, ground
 ¼ cup Extra Virgin Olive Oil
 1 large Tomato, diced
 2 Scallions, finely chopped
 ¼ cup Fresh Cilantro, chopped

In a bowl, whisk together the lime juice, garlic, salt, and pepper.


Whisk in the oil. 


In a large bowl, combine the corn, tomato, scallion, and cilantro. Add the dressing and toss well to coat.
