Loretta’s No Broth Vegetable Soup
No broth? The trick is in the type of veggies, and how they are layered in the soup pot.

Ingredients
4 large Tomatoes, diced
1 large Onion, diced
4 cloves Garlic, minced
1 large or 2 medium Zucchini, sliced thin
1 medium head Romaine, chopped
1 ½ cups Green Beans, diced
¼ cup Fresh Basil, chopped
¼ cup Extra Virgin Olive Oil
Sea Salt (to taste)
Black Pepper (to taste)
1In a large soup pot, layer the vegetables in the order they are written in the directions. Pour the olive oil on top.
2Cover pot and bring to a boil. Keep lid on, turn down to simmer, and cook for another 20 minutes.
3Season to taste with salt and pepper.
4Enjoy! If you tolerate cheese, you can add some freshly grated Parmesan. Make a meal by adding leftover chicken, or beans.

A client of mine recently shared a recipe with me that I found very intriguing. She called it her No Broth Layered Soup. Wait – what? Is it really possible to make a soup without adding any broth or water? Tonight I found out that the answer is YES! You will not believe how delicious AND easy this is.
