Jane vs Shoprite’s Chocolate Chip Muffin

I will say about this recipe is that it is very versatile. Sub the chocolate chips with fresh fruit like blueberries or raspberries, peaches or apples. Or use half shredded carrots or zucchini and some raisins or dried cranberries. The possibilities are endless.

Ingredients 1 cup Oat Bran or Ground Oats ¾ cup Almond Flour/Meal ¼ cup Flax Meal or Ground Flax 1 tsp Baking Soda 1 Pinch Sea Salt 2 Eggs ⅓ cup Pure Maple Syrup

Ingredients 2 tbsp Avocado Oil or Coconut Oil, Ghee, Butter, melted ½ cup Almond or Coconut Milk ¾ cup Dark Chocolate Chips (Enjoy Life or Lilly's)

Preheat oven to 350F degrees. 2 Grease a muffin tin or line with paper cups. 3 Combine all your dry ingredients into a large bowl. 4 Add in the chocolate chips.


5 In a separate medium size bowl, combine the wet ingredients. 6 Combine wet and dry together. 7 Bake for 15-20 minutes or until a fork inserted comes out clean.


Want to swap out the chocolate chips for an alternate filling?  Increase the maple syrup to 1/2 cup and try the following instead: > 1/2 cup dried cranberries or raisins and 1/2 cup diced walnuts

Want to swap out the chocolate chips for an alternate filling?  > 1 small chopped apple and 1/2 cup diced pecans > 1 cup shredded carrot or zucchini > 1/2 cup unsweetened shredded coconut
