In the wintertime, our taste and desire for salads tends to take a dive. Colder weather lessens our cravings for “cold” food and we find ourselves craving more soups, stews, and cooked vegetables.
This holiday, I made a fabulous creation using a dark Romaine lettuce, rubbed kale, roasted butternut squash, toasted sunflower seeds/ pumpkin seeds, and pomegranate seeds with a great homemade dressing.
