Chickpea Pancakes

Ingredients
⅓ cup Chickpea Flour (we love Bob's Red Mill found in most supermarkets)
⅓ cup Water
1 tsp Extra Virgin Olive Oil (add to batter, only when making a savory dish)
1 tsp Ghee or Coconut Oil (for "frying")
1 tsp Lemon Juice OR Apple Cider Vinegar (optional for extra fluffiness)
Optional Added Ingredients (add any of these to the batter BEFORE cooking)
Shredded Apples + Cinnamon + Vanilla + 1Tbsp Finely Diced Walnuts
Mashed Banana OR Other Soft Fruit
Finely Shredded Zucchini + Carrot + Onion + Curry Powder + Cumin
Diced Nitrate- Free Lox + Onion
Shredded Spinach + Mushrooms + Onion & Garlic Powder
1Mix all ingredients together except the tsp of oil for cooking the pancake in the pan.
2Melt cooking oil in pan and pour in batter. Cook pancake for 3-4 minutes each side, or until done.
