Rockin’ Rainbow Chili

This is the perfect all-in-one type of dish to use as leftovers for another night’s dinner or next day lunch.

Ingredients
 1 ½ tbsp Coconut Oil
 2 cloves Garlic, minced
 1 medium Onion, diced
 1 large Green Pepper, diced
 1 large Red Pepper, diced
 2 large Carrots, diced
 1 16oz. container Mushrooms, pre-sliced
 5 cups Spinach, chopped (use pre-washed bagged organic)
 1 lb Grass Fed Beef or Organic Ground Turkey (optional)
 2 cups Canned Pinto Beans (Eden Organic)
 2 cups Tomato Sauce or Diced Tomatoes
 ½ tsp Sea Salt
 Spices of your choice to taste

Heat coconut oil and sauté chopped garlic, onion, and spices for about 5 minutes.

Add green and yellow peppers, carrots and mushrooms and continue sauté for another 5-10 minutes until vegetables are soft but not mushy.

Toss in ground beef and cook for 5-7 minutes until no longer pink.

Add 2 cups pinto beans, spinach, and tomato sauce.

Taste and adjust seasonings.
