Citrus Cucumber Salad

Ingredients
1 cup Cucumber, diced
1 tbsp Fresh Orange Juice
½ cup Orange Sections
¼ cup Onion, sliced
2 tbsp Jalapeno Peppers, finely chopped (optional)
1 ½ tbsp White or Rice Wine Vinegar
1 tbsp Extra Virgin Olive Oil
¼ tsp Sea Salt
⅛ tsp Black Pepper, ground
1Combine all ingredients in a bowl; stir well.
2Serve chilled or at room temperature.
