Chocolate Chip Muffins

A versatile muffin recipe that can be adjusted to please almost anyone.

Ingredients
 1 cup Oat Bran or Ground Oats
 ¾ cup Almond Flour/Meal
 ¼ cup Flax Meal or Ground Flax
 1 tsp Baking Soda
 1 Pinch Sea Salt
 2 Eggs
  cup Pure Maple Syrup
 2 tbsp Avocado Oil or Coconut Oil, Ghee, Butter, melted
 ½ cup Almond or Coconut Milk
 ¾ cup Dark Chocolate Chips (Enjoy Life or Lilly's)

Preheat oven to 350F degrees.

Grease a muffin tin or line with paper cups.

Combine all your dry ingredients into a large bowl.

Add in the chocolate chips.

In a separate medium size bowl, combine the wet ingredients.

Combine wet and dry together.

Bake for 15-20 minutes or until a fork inserted comes out clean.

Want to swap out the chocolate chips for an alternate filling? Increase the maple syrup to 1/2 cup and try the following instead:
> 1/2 cup dried cranberries or raisins and 1/2 cup diced walnuts
> 1 small chopped apple and 1/2 cup diced pecans
> 1 cup shredded carrot or zucchini
> 1/2 cup unsweetened shredded coconut
