Break out of your lettuce, carrot, cucumber rut (and bottled dressing) and whip up a Mediterranean salad with a homemade balsamic vinaigrette

Salad Ingredients
 10 -12 cups Mixed Greens (use organic, pre washed greens from local supermarket)
 1 cup Cherry or Grape Tomatoes, sliced in half
 1 English Cucumber, peeled and sliced thin
  cup Kalamata Olives, sliced in half
 ¼ cup Walnuts, diced
  cup Organic Feta Cheese, crumbled (optional)
Dressing Ingredients
 4 tbsp Extra Virgin Olive Oil
 2 tbsp Balsamic Vinegar
 1 tsp Dijon Mustard
 ¼ tsp Sea Salt
 Black Pepper, ground (to taste)
 1 tsp Oregano, dried

Blend dressing ingredients together.

Toss salad ingredients together and chill.

Add dressing just before serving.
