Holiday Salad with Butternut Squash and Pomegranate
In the wintertime, our taste and desire for salads tends to take a dive. Colder weather lessens our cravings for “cold” food and we find ourselves craving more soups, stews, and cooked vegetables. That being said, there are certain types of ingredients that can “winterize” any salad, tempting me even on a cold snowy day.
I also love to bring and/or make a salad when I am hosting or going to a special event. Summertime might bring out a salad with more fresh herbs, lighter greens, maybe some fresh strawberries and cucumbers. In the winter, its fun to use ingredients such as walnuts, pumpkin seeds, apples/pears, butternut squash or even quinoa.
This holiday, I made a fabulous creation using a dark Romaine lettuce, rubbed kale, roasted butternut squash, toasted sunflower seeds/ pumpkin seeds, and pomegranate seeds with a great homemade dressing. Using the butternut squash and pomegranates was inspired by one of our clients. This was really just divine and SO pretty. Feel free to use the butternut that is already peeled and chopped for ease of prep.
