Healthy homemade jello
Stephanie and I have been on a mission to master a great recipe using immune boosting collagen/gelatin that could be used not only for everyday health but to also be part of our immune arsenal to ward off colds in the winter.
Most gelatin products you’ll find in the grocery stores not only use poor quality gelatin but are filled with added sugar, artificial sweeteners, food dyes and other chemicals. On the other hand, quality well-sourced gelatin is packed with an amazing protein source that can benefit not just your immunity but your skin, hair, nails, bones, and digestive system. A simple homemade “clean” recipe using upgraded gelatin was what we were looking for (you can read more about the healing benefits of gelatin/collagen HERE).
Anyhow, I followed a recipe I found on the internet for raspberry jello. It sounded good. Coconut milk, fresh raspberries, honey, and gelatin. I’m not sure what went wrong, but they tasted awful. I dumped the remains into a bowl and forged ahead with another batch.
Little did I know that in the brief amount of time I stepped away from the kitchen, Marc snapped a photo and posted my disaster on Facebook, with the title “life with a nutritionist.” No one knew WHAT it was . . . spam? bologna? kosher salami?Â
Back to the drawing board, I found another recipe which called for fresh lemon juice and frozen berries. Thankfully, I hit upon a winner. Not only that, the lemon juice added an extra immune booster (vitamin C) in addition to some raw honey. They were so good I made another batch using a combo of mango and pineapple instead of the berries. By the way you can order silicon molds on Amazon in all shapes and sizes, like these.
