A Rainbow of Color
When we teach nutrition and cooking classes, one of the things we love to do is bring in a tray of fresh fruits and vegetables, organized by color. Along with this array of colorful fresh produce, we have a small cup of brightly colored candies, typically something like jelly beans.
After discussing the obvious differences between how veggies vs candy “gets” its color, almost everyone is surprised at how mother nature produces such a wide array of NATURAL colors that are often just as vibrant, if not more than, their chemical-laden counterparts.
An important takeaway is that color signifies anti oxidants, and each color delivers an array of different antioxidants. This brings home the reminder of how important it is to get a variety of fruits and veggies on a daily basis. Which brings us to the amazing benefits of one of our favorite spices – turmeric.
